Golden Eagle Peak is a quick and easy hike to gorgeous views in Eagle Mountain. I love seeing the everything covered in snow!

This trail begins at the Fremont Springs Hiking Trail across from Fremont Springs Park in Eagle Mountain.

As soon as you get above the houses you can look over and see the Saratoga Springs Temple!

There were lots of birds fluttering around, but this was the only picture I could get.

There is a trail that winds up to the top and then one that circles all the way around the north side and meets up at the top.

The views at the top are the best! Here is the one from to the east, slightly south.

The view to the northeast.

Here is the northwest, southwest, and of me.

Here is one more towards Utah Lake and the Saratoga Springs Temple.

For all the details check out this post on Golden Eagle Peak.
Other easy winter hikes are Big Springs, Lisa Falls, Miller Park and Bonneville Glen, Porter Fork Road, and Rocky Mouth Falls.
